Step 2 – Build it up – A Tossed Salad
Build a green salad into a more substantial option with the addition of some vegetables.

Anything can go here - from common vegetables like tomato, cucumber, onion, spring onion, carrot, radish, blanched beans and cauliflower to the more exotic peppers, mushroom, olives, capers, broccoli (steamed).
Ensure vegetables make up half to three-quarters of your salad creation.
This two part salad includes assorted leafy greens + 2 parts of as many different vegetables as you wish. (This is of course a loose equation. Experts agree that most of us fall short in our daily intake of vegetables. And since one really cannot get enough vegetables, this is one place where you can pile them on!)
So your basic Tossed Salad for two will require
For a more substantial green salad you will need –
1 fully prepared recipe of green salad
2 cups assorted vegetables
1 tbsp EVOO
½ tsp Vinegar or 1 tsp lemon juice
Additional salt and pepper to taste
The tossed salad how to:
Place vegetables, EVOO, salt and pepper in a large bowl and toss gently till well coated. Combine with already mixed green salad.
