Serves: 2 as a meal and 4 as a starter

Ingredients:
2 small Mozzarella cheeses
2 Ripe tomatoes of approximately the same size as the cheese
250 gms each of 2 types of sliced meats or cold cuts (like salami and pepperoni)
1 cup each of 1 – 2 types of olives: Italian, Greek or Spanish, green, black, marinated, flavoured, stuffed
1 cup each of 2-4 types of vegetables sticks of cucumber, grilled and roasted sweet peppers, canned artichoke hearts, grilled mushrooms
I large pepper of any color
Olive oil
3 pods of garlic sliced thin
To assemble:
- Gently heat olive oil till hot and add garlic slices. Allow to cool.
- Slice off the top of the pepper and fill with cooled flavoured olive oil.
- Place in the centre of the platter.
- Mentally section off platter into the number of antipasti you have.
- Drain and slice Mozzarella and arrange alternating with slices of ripe skinless tomato on the first part.
- Sprinkle with shredded basil and drizzle with extra-virgin olive oil.
- Across the plate, arrange the sliced meats rolled into cylinders or folded into triangles.
- Beginning with the cheese tomato cup arrange all the vegetable and olives in sections.
- Serve.
