~ Place hulled berries in a wide-mouthed bottle.
~ Cover with champagne vinegar and forget for a few weeks.
~ Decant into another bottle. And enjoy!

Quick fixes
Drizzling a sauce over a bowl of strawberries is the quickest dessert you can whip up! At a pinch, you can also use Caramel Sauce.
Caramel Sauce
~ Stir 1 cup sugar in a small saucepan over medium flame, stirring constantly until it melts into a light brown liquid.
~ Lift the pan occasionally so the sugar doesn't burn at any one place.
~ When it turns a bright golden brown colour, take saucepan off the fire.
~ It will darken some more before it turns to syrup, but cooking it further will spoil the flavour.
To make Caramel Sauce: Add 1 cup of hot water to the hot caramel -- there will be a lot of sizzling in the pan, so be careful -- and boil for five minutes.
To serve: Pour caramel sauce over sliced fruit with a sprinkling of spice.
Or store in a jar for future use.
