Mixed-veg delight

Ingredients:
8 stalks of asparagus
1 whole broccoli
A handful of sweetcorn
2 slices of chopped pineapple
8 rocket leaves
1 cup of pasta
1 chopped fresh mango
How to make it:
- Half cook the asparagus, broccoli, sweetcorn.
- Boil the pasta and keep aside.
- Mix the asparagus, broccoli and sweetcorn with pasta, chopped pineapple and rocket leaves.
- Throw chopped mango pieces on top of the salad.
Why Maria loves this recipe: This salad makes me feel light and fresh. It is a perfect summer salad because it is tasty and super healthy.
Variations: You can ad a dash of olive oil to the salad and throw in a handful of chopped almonds, for more nutritional value.
Maria's tip: Half-cook the vegetables in this salad, so that the veggies retain most of their proteins, vitamins and iron.
You could also garnish the salad with herbs like thyme, oregano, chilli flakes or rosemary.
