It's always better if your cook is from the same community as you. This way he will be sure to get that Khandvi just right. If not make sure your prospective cook does know how to make food that you eat at home on a day-to-day basis at least.
Can He Cook This too?
If you love to eat your Chinese and Italian, make sure to ask your cook if he can stir this up or not. If he doesn't then that may mean that you will have to cook or eat out on the days that your crave for that pasta.
Is His Ego too Big?
Every cook needs to be trained to cook according to your needs. This means he will have to change his style of cooking. For this he needs to be flexible and not have his ego bruised when you tell him to change his style for you. You can judge this within the first week itself.
When Should You Start Training?
All cooks come with their own style of cooking. With a little tweaks from you, they will cook just the way you like it.
Well the sooner the better but this doesn't mean that you start just as soon as your cook steps in on her first day!
